Creamed Spinach

Ingredients

  • 1 pound and 6 ounces of spinach
  • Extra virgin olive oil
  • Butter
  • Grating of nutmeg
  • Tiny squeeze of lemon juice
  • A wine glass of heavy cream
  • A handful of grated Parmigiano-Reggiano

Directions

  1. Preheat the oven to 400°F.
  2. Put all ingredients in an oven-safe dish and mix.
  3. Place in the oven for 5 to 10 minutes, until just colored on top.
